Olde English Apple and Pear Pie
It’s very, very simple. Take a few apples, peel & core. Same for a couple of pears. Fry the apples gently in butter in a medium saucepan for a couple of minutes. Add the juice of a lemon, a good shake of cinnamon and a handful of brown sugar. Add the pears and a few sultanas. Throw in a small schooner of sherry and some water – enough to make a syrup. Poach for about ten minutes, tops. Pour into a pie dish, roll out the puff pasty and bake about 20/25 minutes. (Alternatively do a crumble top). Serve with the usual things, cream, vanilla ice-cream, Greek-style yoghurt, but for the best effect go custard.
